Tropical Sunshine Jam: Passion Fruit, Kumquat, Star Fruit & Banana

1. Prepare the Fruits:

  • Passion Fruit: Cut each one in half and scoop the fragrant pulp and seeds into a large bowl.
  • Thai Kumquats: Wash them thoroughly, slice them thinly (leave the peel on—it’s delicious!), and carefully remove any seeds you can find. This helps reduce bitterness.
  • Star Fruit: Remove the ends and any brown ridges, then dice the rest into small pieces. There’s no need to remove the skin!
  • Bananas: Peel and mash them well with a fork until smooth.

2. Combine & Cook: Place all the prepared fruits into a heavy-bottomed, large saucepan. Add the sugar and lemon juice (and grated ginger, if using). Give everything a good stir.

3. Simmer to Perfection: Cook the mixture over medium heat, stirring frequently until the sugar completely dissolves. As the fruits begin to soften and release their juices, use a potato masher or the back of a spoon to break them down slightly to your preferred consistency.

4. Thicken the Jam: Once the mixture comes to a gentle bubble, reduce the heat to low. Let it simmer gently for 30-40 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.

5. The Plate Test: To check if your jam is ready, place a small saucer in the freezer for a few minutes to chill. Drop a small spoonful of jam onto the cold plate. Let it sit for 30 seconds, then push it with your finger. If it wrinkles and doesn't flood back in, it’s set! If not, cook for a few more minutes and test again.

6. Jar It Up: Once ready, remove the jam from the heat and let it cool slightly for about 5 minutes. Carefully pour the hot jam into clean, sterilized glass jars, leaving about ¼ inch of headspace at the top. Seal the jars tightly.

7. For Longer Storage (Optional): To make your jam shelf-stable, process the sealed jars in a hot water bath for 10-15 minutes. Remove them and let them cool completely on the counter. You should hear the satisfying "pop" of the lids sealing.

8. Store & Enjoy! Store unopened jars in a cool, dark place. Once opened, keep your jam in the refrigerator and enjoy it within a few weeks.
