Ingredients

  • 2 tablespoons fresh aloe vera gel (about 2-3 inches of aloe leaf, filleted)
  • 1 cup coconut water (chilled) 
  • 1 cup fresh pineapple chunks
  • 1 cup fresh mango chunks (about 1 medium mango)
  • Juice of 1 lime (about 2 tablespoons)
  • 1 cup ice cubes
  • 1-2 tablespoons honey or agave nectar (optional, to taste)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the aloe vera: If using fresh aloe leaves, carefully cut off a 2-3 inch section. Slice it lengthwise and scoop out the clear gel with a spoon, avoiding the yellow latex layer just beneath the skin. Rinse the gel under cold water. You can also use store-bought aloe vera gel if it's food-grade and unflavored.

  2. Add ingredients to blender: Place the aloe vera gel, coconut water, pineapple chunks, mango chunks, and lime juice into your blender.

  3. Blend until smooth: Start on low speed and gradually increase to high. Blend for 30-60 seconds until completely smooth and creamy.

  4. Add ice: Add the ice cubes and blend again until the mixture is frosty and slushy, about 20-30 seconds.

  5. Taste and adjust: Sample the smoothie and add honey or agave if you prefer it sweeter. Blend briefly to incorporate.

  6. Serve immediately: Pour into chilled glasses and garnish with a sprig of fresh mint or a wedge of lime if desired.
