🍯 Tropical Dragon Fruit Jam with Mango, Passion Fruit & Kumquat

🧺 Ingredients

  • 2 cups dragon fruit pulp (pink or red flesh preferred)
  • 1 cup ripe mango, diced
  • ½ cup passion fruit pulp (about 4–5 fruits)
  • ¼ cup kumquat slices (seeded, thinly sliced)
  • 1½ cups sugar (adjust to taste)
  • 2 tbsp lemon juice (for acidity and preservation)
  • Optional: 1 tsp grated ginger or vanilla for depth

🔥 Instructions

  1. Prep the fruits

    • Scoop out dragon fruit flesh and mash lightly.
    • Peel and dice mango.
    • Cut passion fruits and scoop out pulp.
    • Slice kumquats thinly and remove seeds.
  2. Cook the jam

    • In a heavy-bottomed saucepan, combine all fruits and sugar.
    • Stir over medium heat until sugar dissolves.
    • Add lemon juice and optional ginger or vanilla.
  3. Simmer & thicken

    • Simmer gently for 25–30 minutes, stirring often.
    • Use the wrinkle test: drop a bit on a cold plate—if it wrinkles when pushed, it’s ready.
    • If needed, add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) to help thicken.
  4. Cool & store

    • Let cool slightly, then spoon into sterilized jars.
    • Store in the fridge for up to 2 weeks, or process in a water bath for longer shelf life.

  • Glaze grilled chicken or tofu

Dragon Fruit, Mango & Passion Fruit Jam

(Yields about 2 cups)

Ingredients:

  • 2 cups dragon fruit (red or white), diced
  • 1 cup ripe mango, finely chopped
  • ½ cup passion fruit pulp (seeds optional for texture)
  • 1 cup granulated sugar (adjust to taste)
  • 2 tbsp lemon juice (or bilimbi juice for extra tang)
  • 1 tsp pectin (optional, for thicker jam)
  • ½ tsp vanilla extract (optional)

Instructions:

  1. Prepare the fruit: Peel and dice the dragon fruit and mango. Scoop out the passion fruit pulp.
  2. Cook the fruit: In a saucepan, combine dragon fruit, mango, passion fruit, sugar, and lemon juice. Simmer on medium heat, stirring occasionally, until the fruits soften (~10 mins).
  3. Thicken the jam: If using pectin, mix it with a little sugar and stir into the jam. Continue cooking until thickened (~15-20 mins). For a smoother texture, lightly mash with a spoon.
  4. Test for doneness: Place a small spoonful on a cold plate—if it gels, it’s ready.
  5. Cool & store: Remove from heat, stir in vanilla (if using), and let cool slightly before transferring to sterilized jars. Refrigerate for up to 2 weeks or can for longer storage.

Flavor Notes:

  • The dragon fruit provides a mild, kiwi-like base.
  • Mango adds sweetness and body.
  • Passion fruit gives a bright, tropical tang.

Alternative Idea: Swap passion fruit for guava for a richer, floral sweetness, or add blackberries (Arapaho) for a deeper berry twist!
