🍯 Tropical Dragon Fruit Jam with Mango, Passion Fruit & Kumquat
🧺 Ingredients
- 2 cups dragon fruit pulp (pink or red flesh preferred)
- 1 cup ripe mango, diced
- ½ cup passion fruit pulp (about 4–5 fruits)
- ¼ cup kumquat slices (seeded, thinly sliced)
- 1½ cups sugar (adjust to taste)
- 2 tbsp lemon juice (for acidity and preservation)
- Optional: 1 tsp grated ginger or vanilla for depth
🔥 Instructions
Prep the fruits
- Scoop out dragon fruit flesh and mash lightly.
- Peel and dice mango.
- Cut passion fruits and scoop out pulp.
- Slice kumquats thinly and remove seeds.
Cook the jam
- In a heavy-bottomed saucepan, combine all fruits and sugar.
- Stir over medium heat until sugar dissolves.
- Add lemon juice and optional ginger or vanilla.
Simmer & thicken
- Simmer gently for 25–30 minutes, stirring often.
- Use the wrinkle test: drop a bit on a cold plate—if it wrinkles when pushed, it’s ready.
- If needed, add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) to help thicken.
Cool & store
- Let cool slightly, then spoon into sterilized jars.
- Store in the fridge for up to 2 weeks, or process in a water bath for longer shelf life.

Instructions:
- Prepare the fruit: Peel and dice the dragon fruit and mango. Scoop out the passion fruit pulp.
- Cook the fruit: In a saucepan, combine dragon fruit, mango, passion fruit, sugar, and lemon juice. Simmer on medium heat, stirring occasionally, until the fruits soften (~10 mins).
- Thicken the jam: If using pectin, mix it with a little sugar and stir into the jam. Continue cooking until thickened (~15-20 mins). For a smoother texture, lightly mash with a spoon.
- Test for doneness: Place a small spoonful on a cold plate—if it gels, it’s ready.
- Cool & store: Remove from heat, stir in vanilla (if using), and let cool slightly before transferring to sterilized jars. Refrigerate for up to 2 weeks or can for longer storage.

- The dragon fruit provides a mild, kiwi-like base.
- Mango adds sweetness and body.
- Passion fruit gives a bright, tropical tang.
Alternative Idea: Swap passion fruit for guava for a richer, floral sweetness, or add blackberries (Arapaho) for a deeper berry twist!
