Recipe: Vegan Thai Gra-Sung Salad

Ingredients:

For the Salad:

- 2 cups Gra-Sung leaves, washed and chopped

- 1 cup cherry tomatoes, halved

- 1 cucumber, thinly sliced

- 1 red onion, thinly sliced

- 1/2 cup roasted peanuts, chopped

- Fresh cilantro leaves for garnish

For the Dressing:

- 3 tablespoons soy sauce

- 2 tablespoons lime juice

- 1 tablespoon agave syrup or maple syrup

- 1 tablespoon sesame oil

- 1 clove garlic, minced

- 1 teaspoon fresh ginger, grated

- 1 red chili, finely chopped (adjust according to your spice preference)

Instructions:

1.  Prepare Gra-Sung: 

   - Wash and chop the Gra-Sung leaves. Set aside.

2.  Assemble the Salad: 

   - In a large salad bowl, combine Gra-Sung leaves, cherry tomatoes, sliced cucumber, sliced red onion, and chopped roasted peanuts.

3.  Prepare the Dressing: 

   - In a small bowl, whisk together soy sauce, lime juice, agave syrup, sesame oil, minced garlic, grated ginger, and chopped red chili.

4.  Dress the Salad: 

   - Pour the dressing over the salad ingredients. Toss gently to coat the vegetables and Gra-Sung leaves evenly with the dressing.

5.  Adjust Seasoning: 

   - Taste the salad and adjust the seasoning if needed. You can add more soy sauce, lime juice, or agave syrup to balance the flavors.

6.  Garnish: 

   - Garnish the salad with fresh cilantro leaves.

7.  Serve: 

   - Divide the salad into individual serving plates or bowls.
