Vegetarian Omelette with Cha-Om, Sweet Potato Leaves, Indian Long Pepper, and Shining Bush

 

Ingredients:

  • 4 large eggs (for a basic omelette)
  • 1/2 cup cha-om leaves, washed and chopped
  • 1/2 cup sweet potato leaves, washed and chopped
  • 1 Indian Long Pepper, finely chopped
  • 2 tablespoons shining bush leaves, chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup tomatoes, diced
  • 1/4 cup bell peppers (any color), diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter for cooking

Instructions:

  1. Prepare the Ingredients:

    • Wash and chop cha-om leaves, sweet potato leaves, shining bush leaves, onion, tomatoes, and Indian Long Pepper.
  2. Saute Vegetables:

    • Heat 1 tablespoon of olive oil or butter in a non-stick skillet over medium heat.
    • Add chopped onions and sauté until translucent.
    • Add diced tomatoes and bell peppers, cook until they are slightly softened.
  3. Add Greens and Long Pepper:

    • Add cha-om leaves, sweet potato leaves, chopped shining bush leaves, and Indian Long Pepper to the skillet.
    • Sauté the mixture for 2-3 minutes until the greens are wilted and the Long Pepper releases its aroma.
  4. Prepare the Eggs:

    • In a bowl, beat the eggs together. Season with salt and pepper to taste.
    • Pour the beaten eggs over the sautéed vegetable mixture.
  5. Cook the Omelette:

    • Allow the eggs to set around the edges. Use a spatula to lift the edges and let the uncooked eggs flow underneath.
    • Continue cooking until the omelette is mostly set but still slightly runny on top.
  6. Fold and Serve:

    • Once the omelette is cooked to your liking, fold it in half using the spatula.
    • Slide the omelette onto a plate and garnish with additional fresh herbs if desired.
  7. Serve and Enjoy:

    • Serve the vegetarian omelette hot with your favorite sauce or chutney on the side.
