Vegan Laab Huaplee

Ingredients

  •  1 cup banana blossom, finely chopped
  •  1/2 cup mushrooms, finely chopped (shiitake, enoki, or button mushrooms work well)
  •  1/4 cup shallots, finely chopped
  •  1/4 cup cilantro, finely chopped
  •  1/4 cup mint, finely chopped
  •  2 tablespoons lime juice
  •  1 tablespoon tamarind paste
  •  1 tablespoon soy sauce
  •  1 teaspoon mushroom powder
  •  1/2 teaspoon salt
  •  1/4 teaspoon black pepper

Instructions

  • 1. In a large bowl, combine the banana blossom, mushrooms, shallots, cilantro, mint, lime juice, tamarind paste, soy sauce, mushroom powder, salt, and pepper.
  • 2. Mix well until all ingredients are combined.
  • 3. Taste and adjust seasonings as desired.
  • 4. Serve immediately with your favorite vegetables, such as lettuce, cucumber, and carrot sticks.

Tips

  •  For a spicier laab, add more chili powder or red pepper flakes to taste.
  •  To make a vegan laab, use mushroom powder instead of fish sauce.
  •  You can also add other vegetables to your laab, such as bell peppers, radishes, or green beans.
