Recipe: Vegan Laab Huaplee
Ingredients
- 1 cup banana blossom, finely chopped
- 1/2 cup mushrooms, finely chopped (shiitake, enoki, or button mushrooms work well)
- 1/4 cup shallots, finely chopped
- 1/4 cup cilantro, finely chopped
- 1/4 cup mint, finely chopped
- 2 tablespoons lime juice
- 1 tablespoon tamarind paste
- 1 tablespoon soy sauce
- 1 teaspoon mushroom powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1. In a large bowl, combine the banana blossom, mushrooms, shallots, cilantro, mint, lime juice, tamarind paste, soy sauce, mushroom powder, salt, and pepper.
- 2. Mix well until all ingredients are combined.
- 3. Taste and adjust seasonings as desired.
- 4. Serve immediately with your favorite vegetables, such as lettuce, cucumber, and carrot sticks.
Tips
- For a spicier laab, add more chili powder or red pepper flakes to taste.
- To make a vegan laab, use mushroom powder instead of fish sauce.
- You can also add other vegetables to your laab, such as bell peppers, radishes, or green beans.
