Both the white and purple flowers of Sesbania grandiflora are edible, but with one caveat.
White flowers are generally considered more desirable for consumption because they have a milder, less bitter taste. These are often enjoyed raw in salads, boiled, deep-fried, or added to soups.
Purple flowers can also be eaten, but they tend to be more bitter. To reduce the bitterness, the central part of the flower, the pistil, is usually removed before consuming them.
