Vegetarian Pad Krapow with Fried Egg

Ingredients:

For the Stir-Fry:

  • 2 cups firm tofu, diced
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2-3 Thai bird chilies, finely chopped (adjust according to spice preference)
  • 2 cups mixed vegetables (such as bell peppers, green beans, and carrots), chopped
  • 1 cup Holy Basil (Bai Krapow), loosely packed
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetarian oyster sauce or soy sauce
  • 1 teaspoon sugar

For the Fried Egg:

  • 4 large organic eggs
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

  1. Prepare the Tofu:

    • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
    • Add diced tofu and stir-fry until golden brown and slightly crispy. Set aside.
  2. Cook the Vegetables:

    • In the same pan, add another tablespoon of oil.
    • Add minced garlic and chopped Thai bird chilies, sauté for about 30 seconds until fragrant.
    • Add the mixed vegetables and stir-fry until they are tender-crisp.
  3. Combine Tofu and Vegetables:

    • Return the cooked tofu to the pan with the vegetables and mix well.
  4. Season the Stir-Fry:

    • Add soy sauce, vegetarian oyster sauce (or additional soy sauce), and sugar to the pan. Mix thoroughly.
  5. Add Holy Basil:

    • Once the vegetables are cooked, add the Holy Basil leaves to the pan. Stir until the basil is wilted.
  6. Fry the Eggs:

    • In a separate pan, heat a bit of vegetable oil over medium heat.
    • Crack the eggs into the pan, season with salt and pepper, and fry until the edges are crispy, but the yolk is still runny.
  7. Serve:

    • Spoon the vegetarian Pad Krapow over steamed rice.
    • Top each serving with a fried egg.
  8. Garnish (optional):

    • Garnish with additional fresh Holy Basil leaves and sliced red chili for extra flavor and presentation.
