Recipe: Vegetarian Pad Krapow with Fried Egg
Ingredients:
For the Stir-Fry:
- 2 cups firm tofu, diced
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2-3 Thai bird chilies, finely chopped (adjust according to spice preference)
- 2 cups mixed vegetables (such as bell peppers, green beans, and carrots), chopped
- 1 cup Holy Basil (Bai Krapow), loosely packed
- 2 tablespoons soy sauce
- 1 tablespoon vegetarian oyster sauce or soy sauce
- 1 teaspoon sugar
For the Fried Egg:
- 4 large organic eggs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
Prepare the Tofu:
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
- Add diced tofu and stir-fry until golden brown and slightly crispy. Set aside.
Cook the Vegetables:
- In the same pan, add another tablespoon of oil.
- Add minced garlic and chopped Thai bird chilies, sauté for about 30 seconds until fragrant.
- Add the mixed vegetables and stir-fry until they are tender-crisp.
Combine Tofu and Vegetables:
- Return the cooked tofu to the pan with the vegetables and mix well.
Season the Stir-Fry:
- Add soy sauce, vegetarian oyster sauce (or additional soy sauce), and sugar to the pan. Mix thoroughly.
Add Holy Basil:
- Once the vegetables are cooked, add the Holy Basil leaves to the pan. Stir until the basil is wilted.
Fry the Eggs:
- In a separate pan, heat a bit of vegetable oil over medium heat.
- Crack the eggs into the pan, season with salt and pepper, and fry until the edges are crispy, but the yolk is still runny.
Serve:
- Spoon the vegetarian Pad Krapow over steamed rice.
- Top each serving with a fried egg.
Garnish (optional):
- Garnish with additional fresh Holy Basil leaves and sliced red chili for extra flavor and presentation.
